If we've said it once, we've said it a thousand times - we love simultaneously embracing the old school as well as our status as a modern day brewery here at Polly's. The hop bill in Pilot to Base fully embraces this passion by using plenty of Chinook to signify the old school, with Mosaic checking the modern day US hop varietal, and just a little touch of Enigma to showcase those incredible sought after new world hops from the south Pacific that make modern day brewing so wonderful. Expect to find raspberries, and pinot gris grapes from the Enigma, backed up with the usual tropical Mosaic explosion, with plenty of pine from Chinook.
