Of all the hop combinations we’ve worked with over the years here at Polly’s, our brewers were absolutely astounded that we’d never paired up Idaho 7 and Sabro in our long, almost eight year(!) history. A variety very much unique to itself; Idaho 7 has been a long time brewery favourite for its up front tropical notes of apricot, papaya and red grapefruit, but even more so for those ultra complex underlying notes of earthy black tea and sticky pine notes to prevent it being one-dimensional. Sabro needs zero introduction - out there on its own as possibly the most marmite hop since Sorachi Ace, we absolutely vibe off the coconut cream, tangerine, pina colada notes this neomexicanus hop brings to the party.
