We make no secret of just how much we love Mosaic here at Polly’s HQ, whether it’s hot side or cold side, we absolutely love how much this incredible varietal makes our beers pop thanks to the complexity that warrants its name. Whilst we’ve done single hop Mosaic showcases before – hello Fickle and last year’s Heavy Moon – we’ve never gone as big as we have with More Than Dreaming. With a frankly crazy 65kg all in, this beer is bursting with the typical Mosaic notes; a medley of berries, bubblegum, and mango, with some of the lesser picked up flavour profiles – rosewater, tangerine, as well as earthy bitterness to round everything off.
