As we steamroll into our fifth birthday celebrations, we wanted to tip a hat to all things that brought us to where we are today here at Polly’s. In what feels like an age ago now, we launched the brewery with five beers, one of which was heavily hopped with the white whale of the beer industry at the time; the elusive Australian varietal, Galaxy. As a sign of where we stand today, we now pretty much have carte blanche with this hop that sets the phasers to hype, and we’ve gone all out on Latin Jacket as a single hop celebration. A magnificently potent and pungent varietal; expect all the greatest hits on display with a 35kg dry-hop charge bringing all manner of intense citrus, peach and passionfruit flavours to the party in this all in, maxed out IPA.

Since launching in early 2018 we have grown and adapted our setup to form a small but tight-knit team of ten running the day to day operations of the brewery.
Our motto is to never stop improving; we’re always learning and tweaking our beer designs to create the best beer we possibly can, packaged into only kegs and cans to optimise freshness and keep our beer tasting as fresh as it does from the source.
