It's safe to say that since it re-entered our lives on the back of our recent collaboration beer with Funky Fluid, we're finding that we've got a huge soft spot here for HBC 630 here at Polly's. Part of the Hop Breeding Company's experimental arm, we've absolutely fallen in love with the flavour compounds this varietal imparts into our beers. With sweet candy-like flavours abound, we pick up a whole host of cherries, raspberries, as well as (no seriously) peaches and cream to boot. We don't want to shoot too far off the sweet and cloying end of things though, so Heeko is backed up with old-school favourite of the brewery Simcoe to bring a piney citrus zest to proceedings.
