In a modern day world where supremely talented hop farmers are capable of creating hybridised versions of hops that hold aromas of slick pot smoke and flavours of coconut cream, it’s important to occasionally take a step back to champion the hops that laid the foundation for these new school hype hops that come along every few years and draw people’s attention away. With a distinctly 2018 Loka Polly vibe but updated with 2025 techniques, we’ve brought Callisto to the party - a pale ale built entirely on those incredible hop varieties that allowed us to build a reputation for incredible hop-forward beers all those years ago. A four way dance of Citra, Columbus, Mosaic and Simcoe; Columbus lays the foundations of this beer with a bright but refreshing grassy bitterness, before the dependable cold side trio of Mosaic, Simcoe and Citra bring that plush, juicy, fruit forward vibe we love so much - think tangerines, fresh cut limes, summer fruit berries, and bubblegum sweetness.
