We make no secret of how much our head brewer Lally has expanded and how his influence has improved our range as a brewery. From his days creating some of the most well regarded classics over at Mad Hatter, we’ve handed the wheel fully over to our resident sour beer chief to create Everything Peachy. A beer that traverses the line between the classics and the modern styles, we’ve brought the amount of wheat used in this beer up to a third of the total grist bill and pitched with lactobacillus to create a gentle, spritzy sour base beer with a crisp, clean body, and a gentle amount of haze. Wanting to put a modern stamp on things though, we’ve absolutely front loaded this Berliner weisse to the nines with 75kg of peaches to bring this beer firmly into 2023.
